Entrepreneurship and craftsmanship are in Yvette’s blood. For more than seven generations, her family in Wales has been connected to farming and food, with generations of her family also running butcher’s shops.
From an early age, Yvette was surrounded by a love of good food, quality ingredients and traditional craftsmanship. Food took on a special meaning for her from a very young age. Yvette was diagnosed with coeliac disease when she was just two years old, in 1976. At that time, gluten-free products were extremely difficult to find and the choice available was very limited.
Together with her mother and grandmother, she began baking and experimenting at home. This is where her love of baking began – initially out of necessity, but soon also from the joy of creating something delicious that she could safely eat.

Gluten-free recipes
Years later, this took on even greater significance when it turned out that all six of her children also have coeliac disease. Yvette didn’t want her children to feel like they were missing out on anything. A birthday should just be a birthday—complete with cake.
A treat should be just as delicious as anyone else’s. And good bread should be something to enjoy—not something you had to settle for just because it happened to be gluten-free.
With a lot of love, patience, and perseverance, Yvette kept experimenting and developed more and more of her own gluten-free recipes.

The Welsh Bakestone
In 2012, Yvette turned her passion into a dream and opened The Welsh Bakestone, a completely gluten-free bakery and tearoom.
What began from her own experience of living with coeliac disease grew into an artisan gluten-free bakery with an online shop, a loyal customer base and partnerships with restaurants, cafes and specialist retailers.
To this day, Yvette’s personal experience remains at the heart of The Welsh Bakestone. She knows from experience how important it is to be able to trust that something is genuinely gluten-free. But she also believes that being safe is only part of the story. Gluten-free food should, above all, be delicious.
